For Donuts
2cupsall-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
2 large eggs, room temperature
2/3cuplight brown sugar, packed
1cupbuttermilk, stirred to loosen
4 TBSP unsalted butter, melted
3 tsp vanilla
For Topping
1cupgranulated sugar
1 1/2 tsp ground cinnamon, ore more if desired
1/2cupunsalted butter, melted
Instructions
Preheat oven to 350
Spray donut pan with non-stick cooking spray
In a medium bowl, whisk flour (spooned and leveled), baking powder, baking soda, salt, and cinnamon together
In a separate bowl, whisk together egg, brown sugar, and buttermilk together until smooth
Add melted butter and vanilla, mix until combined
Pour wet ingredients over the flour mixture and mix until just combined
Do not over mix
Spoon batter directly into donut pan holes or alternatively, scoop dough into a ziplock bag to pipe into donut pan
Fill donut holes about 3/4 full
Bake for 8-10 minutes or until edges of donuts are golden brown
Remove from oven and allow to cool in pan for 3-5 minutes
Transfer to cooling rack and bake remaining batter
For topping, mix cinnamon and sugar together in a shallow bowl
Brush all sides and center of donut with melted butter and dunk the donut in the cinnamon sugar mixture
